Amuse Bouche

  • Poached fish maw in goose sauce
  • Crispy organic spinach shrimp’s mousse dumpling with crystal kumquat

Main Course

  • Barbecued pork and chicken liver with honey
  • Deep-fried crab roll with shredded turnip
  • Stewed Ofunato Bay oyster in port wine
  • Sautéed lobster with homemade gravy sauce
  • Double-boiled assorted air-dried seafood
  • Wok-seared Australian M9 wagyu beef fillet and black truffle
